Download the zip file, extract it and try running the included LightTable executable (make sure the permissions are set correctly). This is basically my working /opt/LightTable folder. Now you will find an additional zip file. To be honest, I'm not a pro and just a user myself.

As far as I have seen, Ubuntu seem to install the exectuable in /usr/bin and doesn't install any of the secondary files? In my case (Arch Linux) the executable (along with other files) is there and I put the files next to the exectuable. If the folder /opt/LightTable is not there, creating it won't solve the problem for you. deb?) are installing the application in a different way than Arch Linux does.
